I have a short and sweet post for you today. It has been a busy week over here, and this yummy and quick zucchini is here to save the day when you’re about to eat pita chips and hummus or chocolate for dinner again (yeah that happened). I wouldn’t call myself a huge veggie lover, but I’ve found that a little bit of olive oil and the right seasonings can turn almost anything into a halfway decent tasting dish. That being said, this zucchini is much more than halfway decent, it’s delicious! Here’s what you’ll need…
Yeah, there’s no second picture. That’s seriously all you need. I’m a firm believer that delicious food does not need to be complicated. And this zucchini definitely supports that belief!
First, chop your zucchini into cute little cubes, and toss them in the pan with some olive oil.
Then, add your seasonings.
Then toss to combine, and cook on medium heat for 5-8 minutes until the zucchini is lightly browned and easily pierced with a fork.
That’s it! I told you it was easy! We ate it alongside chicken and rice. Hope you enjoy!
(Side note: Have you ever cooked your rice in chicken broth instead of water? It’s awesome! If you’re watching your sodium intake, you can do 50/50 chicken broth and water. I highly recommend it!)
3/4 tbsp. olive oil
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. crushed red pepper flakes
1. Wash and chop zucchini into cubes.
2. Heat olive oil over medium heat. Add the zucchini and spices.
3. Toss to evenly coat each piece. Cook for 5-8 minutes, stirring occasionally, until zucchini pieces are lightly browned and easily pierced with a fork.
