Rosemary Roasted Potatoes

Hi friends!

Another short and sweet side recipe for you tonight. I’m kind of in love with potatoes. Russet, yellow, red, I love them all! And these roasted potatoes are an easy but elegant side dish to enjoy. Yum!

I forgot to take a picture of the ingredients, whoops! But your first step, is to wash and dice your potatoes. Then add them to a large bowl with your olive oil and rosemary and mix until evenly coated!

Line your baking sheet with foil for easy clean up. Then pour your potatoes onto your baking sheet, and crank a bit of salt on pepper on top.

Pop them in the oven for 35-45 minutes. Your kitchen will smell delicious!

Crispy on the outside, delicious and potato-ey on the inside. We ate these tasty potatoes with fish and broccoli. A delicious and filling meal!

Serves: 3-4

Ingredients

2 lbs. red potatoes

2 tbsp. dried rosemary

1.5 tbsp. olive oil

Salt & Pepper

Instructions

Preheat your oven to 400° F.

Wash and dice your potatoes.

Add your potatoes, olive oil, and rosemary to a large bowl. Toss to combine.

Pour potatoes onto foil lined baking sheet, making sure the potatoes are evenly spaced.

Lightly coat with salt and pepper.

Bake for 35-40 minutes, or until nice and crispy.
