Hi friends! I’m back! We had SUCH a wonderful time with friends and family in California. But life is back in full swing, and it already feels like vacation was too long ago. I hope you all had a wonderful holiday season.

I know a 2015 resolution for me is to figure out a better cooking schedule when working night shifts, I’ve yet to find a balance, but I think cooking larger quantities that will last a few days is going to be the solution. Here’s what we’re eating this week!

Meal Plan for Dec. 1st-7th

Monday: Leftover Chinese Food

Tuesday (G) (W): Sweet Potato & Quinoa Turkey Chili

Wednesday (W): Leftover Chili

Thursday (W): Leftover Chili

Friday: Date Night!

Saturday: Baked Shrimp with Creamy Parm-Garlic Quinoa & Steamed Broccoli

Sunday: Bean Soup*
