Easy Chickpea Salad

IMG_3497 Hello blogging world! Soooo I’m still here! Life has been crazy and we have been eating out WAY too much. But I’m just about to start a new job (yay!) and I’m using this change to motivate me to get back to cooking at home. Also, my interview clothes hardly fit (thank you, New Orleans), so that’s inspiration too. (;

I’m kind of obsessed with this easy lunch salad. It’s so simple and can be enjoyed multiple ways. Make a big batch and enjoy it all week! First, pour some chickpeas in a bowl. IMG_3489 Then, some cherry tomatoes. IMG_3491 And some red onions. (See I told you it was easy) IMG_3492 Then add a bit of salt and pepper, splash of lemon juice, and some Italian dressing. IMG_3493 Then mix it up, and store in the fridge in an airtight container. That’s it! IMG_3494 You can eat it straight from the bowl, over mixed greens, as a side dish to meat, so many ways!! I’ll share my favorite way to enjoy it next week!

Serves: 3-5


1 16 oz can chickpeas

1/2 a pint of cherry tomatoes, halved

1/4 of a red onion, diced

Pinch of salt & pepper

1 tsp. lemon juice

1.5 tbsp. Italian dressing


1. Add all ingredients to a large bowl

2. Mix to evenly distribute dressing

3. Keep refrigerated in an airtight container for up to a week

Yum! Enjoy!
